Trying to
come up with a different flapjack recipe for the party on Saturday was easy; my
Mum LOVES popcorn, and I’ve been meaning to try popcorn flapjacks for a while,
so this was the perfect excuse to finally give them a go! I’m regretting not
trying them sooner now – these are my new favorite! (Sorry the photo is a bit dark - being inside at night, with no flash, after a few drinks can be blamed for that!)
Ingredients:
175g unsalted butter
175g unsalted butter
2tbsp
golden syrup
175g demerara
sugar
225g rolled
oats
100g toffee
popcorn
Drizzle of
maple syrup
Pre-heat
your oven to 160c and grease/line a deep-sided baking tray or dish.
In a small
saucepan over a low heat, melt the butter and golden syrup together. Once
melted, remove from the heat and leave to cool.
In a large
mixing bowl, combine the sugar and oats and make a well in the middle. Pour the
cooled butter into the well and mix thoroughly, making sure all of the oats are
covered in the butter mixture.
Stir in the
toffee popcorn, and tip the mixture into your tray or dish. Press the mixture
down with the back of a spoon, pushing it into the corners and leveling the
surface.
Drizzle
over a little maple syrup before popping it in the oven and baking for 18-20
minutes.
