Malteaser Traybake

Another traybake I made for James' last day at work - we still had a tube of unopened Malteasers left over from Christmas, so I thought I'd used them up! Plus it's super quick to make! The original recipe left them a little firm and dry, so I've adapted it a bit to make them softer. Recipe adapted from Bake.

Ingredients:
125g unsalted butter, softened
200g light brown muscovado sugar
2 eggs
1 tsp vanilla
1 tbsp whole milk
230g plain flour
A tube of Malteasers (or two packets)
Icing sugar for dusting

Pre-heat your oven to 160c and line a square baking dish/tray with greaseproof paper.

In a large mixing bowl, cream together the butter and sugar until it's light and fluffy.
Stir in the eggs, one at a time, along with the vanilla and a splash of milk.
Finally, sift in the flour and baking powder and fold into the mixture until everything is combined.

Tip the mixture into your prepared dish and spread out with the back of a spoon - make sure you push it into the corners, and leave a level surface.
Scatter over the Malteasers and lightly press them into the batter. Bake for 30-35 minutes, until lightly golden and just firm to the touch.
