Honey and Almond Oatmeal Cookies



Oatmeal cookies are one of my favourites. They are so easily adaptable, you can use the same base recipe for anything from fruity, to chocolatey, to nutty cookies - and you can get a lot of cookies from what seems like a relatively small amount of ingredients, depending on what size you make them, which makes them great for feeding a crowd. This recipe is adapted from here.

Ingredients:
150ml vegetable oil
150g golden caster sugar
1 large egg, beaten
1 tsp almond extract
2 tbsp acacia honey
90g plain flour
60g ground almonds
300g rolled oats

Pre-heat your oven to 180c and line a couple of baking sheets with greaseproof paper.
In a large bowl, whisk together the oil and sugar lightly. Add the egg, almond extract and honey and give it a good mix. Lastly, add the flour, ground almond and oats and mix it all together until everything is well combined and it comes together in a rough dough.

Dust your hands with flour and shape heaped tablespoons of the dough into thick patties. Place the cookie patties on your baking trays, spacing them apart slightly.

Bake for 15-18 minutes, until they're just starting to turn golden, and are just firm to the touch. Leave to cool on the trays for a few minutes before transferring to a wire rack to cool completely.
